cpu_map.h has a lot of examples and every feature should be referenced somewhere.
I would be careful on some of your spare pins. Especially the ones used for the flash. See this wiki page.

Those flash pins are used for on board SPI flash. That is where the firmware is stored. Even wiring them out to a ocnnector could cause problems. You cannot use them anyway.
